The high protein skimmed milk from M&S has me confused

When I walked past the high protein skimmed milk on the shelf at my local M&S, I felt like it had been made especially for me - I publish lots of content about protein and lots of content about M&S, so there was no way I was going to miss out on trying this new product from my favourite supermarket.

I was very excited to try this product because the protein statistics are super impressive - the high protein skimmed milk from M&S contains 6.3g of protein per 100ml. To put that into perspective, the standard skimmed milk from M&S contains 3.5g of protein per 100ml, so you're getting almost twice as much in this high protein version.

But then I took a look at the calories - the high protein skimmed milk contains 62 calories per 100ml, whereas the standard skimmed milk from M&S contains 36 calories per 100ml. So you're getting almost twice as much protein, but you're also almost getting twice as many calories. Not very impressive.

I was also intrigued that there were no additional ingredients listed - it's just skimmed milk. This got me thinking about how the team at M&S has managed to make normal skimmed milk contain almost twice as much protein.
I tried to find out - I spoke to the chat on the website and called the food department - and nobody could tell me! Which is really frustrating. My guess is that has something to do with the pasteurisation process.
Finally, I tried the high protein skimmed milk, and I'm sorry to say that I don't think I'll be buying this again. It tastes really sweet and also has a weird texture. I tried it in coffee and it didn't work at all.
It's really disappointing as I was excited at the prospect of buying milk with twice as much protein as normal milk and being able to add more protein to my diet, but looks like that won't be happening. M&S, I'm disappointed in you.
