It's actually very hard to find organic balsamic vinegar, which is why we were delighted to stumble across the Clearspring balsamic vinegar in our local health shop - made by the Mengazzoli family in Modena using organic Trebbiano grapes, the family uses a centuries-old process to turn the grapes into balsamic vinegar.
